Cook's note: A hand-held mixer is perfect for getting this dish mixed and into the oven quickly. An old-fashioned egg beater or whisk works well, too. You'll need to start preheating the oven a few minutes before mixing the pancake.
RECIPE INGREDIENTS:
2 eggs
1/2 cup skim milk (I used 2%, worked fine!)
1-1/2 cups buttermilk biscuit mix (such as Bisquick)
1/2 tsp. apple pie spice or ground cinnamon (IN this case, more IS better.)
One 21 oz. apple pie filling
Cooking oil spray
1-1/2 cups finely shredded sharp Cheddar cheese
Warm maple syrup for passing at the table
1. Preheat the oven to 450 degrees. In a 2-quart or larger bowl, whisk the eggs. Whisk in the milk, biscuit mix and apple pie spice. Blend well. (The batter will have some lumps.) Stir in the apple pie filling.
2. Spray a 9-by-13-inch glass baking dish with cooking oil spray and pour in the batter. Bake for about 14 minutes or until the pancake just begins to brown around the edges and a wooden pick inserted in the center comes out clean. (The top will not brown.)
I used my 8" cast iron skillet, worked fine. And the broiler gave it a nicely golden brown top, a little mottled.
3. Remove the pancake from the oven and sprinkle with the cheese. Return it to the oven for 2 minutes to melt the cheese. Let the pancake rest for 2 minutes and serve with warm maple syrup, if desired. Makes 6 servings.
I like Jimmy Dean's Sage Sausage on the side.
Or another favorite;
Spiced pancakes
2 1/2 c. all purpose flour
1 tbsp. +2 tsp. baking powder
1 tsp. salt1 tsp. baking soda
1 tsp. ground cinnamon (I often use Pumpkin Pie Mix or Baking Mix spices)
1/2 tsp. ground ginger
1/4 c. molasses (add 2 tbs. dark brown sugar)
2 c. milk
2 large eggs
6 tbs. melted butter
1 c. raisins (or ultramix with cherries, cranberries and blueberries, dried)
Mix flour, baking powder, salt and soda and spices,
in separate bowl beat together eggs, milk,molasses and butter, add flour mixture, beat together, then fold in raisins.
Let rest for about 10 minutes.
Then cook as usual in skillet, because of the molasses and spices the batter is dark in color, so watch carefully and make sure the pancake is cooked thoroughly, i.e. bubbles in the middle.

So, those olives turn out to be a like an olive Wellington? The doughy stuff bakes into a kind of shell and then you bite into the olive? MMM!! sounds SO GOOD! Thanks, TMW!
It's not a hard shell, my Mother used this recipe at so many AF occassions(Officer's Wives Club, cocktail parties, Pioneer Club functions) they were requested constantly!
I'd get a couple...heheheheh!
