Drew's Onion-Dill Bread
I let my breadmaker do the majority of the work for this recipe, I have a 'Dough" setting that allows me to remove the dough before the second rising. This gives me the flexibility to divide this recipe into 2 loaves of a more useable shape. I do the same with my french bread recipe, as I have the baquette pan for the proper shaping and the cutting of the top.
This recipe is from the maker of my first bread machine and is a HUGE favorite with my family!
1 package yeast
3 1/2 cups flour (I use bread machine flour, but regular can be used in a pinch.)
1/4 tsp. baking soda
1 1/2 tsp. salt
1 unbeaten egg (room temperature)
Mix together, warm and add;
1/4 cup water
3/4 cup cottage cheese
3/4 cup sour cream
3 Tbsp. sugar
3 Tbsp. minced dried onion
2 Tblsp. dill seed (leaves work well too, and I add a smidgeon more...)
1 1/2 Tblsp. butter
Add to machine in order listed, select either white bread or dough and push start...
if baking in an oven, preheat to 350 degrees. Check for brownness, tap top to test for doneness, about 30 mins.
Remove from oven, tip out of sprayed pans onto wire cooling rack, let cool for about 20 mins. before slicing...NO CHEATING, the loaf will collapse!

Makes yummy sandwiches...homemade makes the whole house smell soooooo good!
